Dark green leafy vegetables and salad greens are richer in beta-carotene than lightly colored veggies. Romaine lettuce contains six times as much vitamin C and eight times more beta-carotene than iceberg lettuce. Spinach, watercress, arugula and chicory are other good choices. A cup of dark green broccoli contains 90% of the RDA for vitamin A in the form of beta-carotene.
